savory beignet ''fricassé''





ingredients:
pastry:

-500g
-1 egg
-2 tablespoons olive oil -1tablespoon yeast -1 tsp salt -1/2 tsp sugar -Oil for frying -warm water

filling:

3 potatoes cut in small cubes and cooked in boiling water
hard boiled eggs
tuna
olives
harissa (red pepper sauce)
instructions:

-in a large bowl, put a glass of warm water and add yeast sugar and salt
-add the flour and egg and mix, add warm water until a dough is formed, then knead it until smooth (5 min)
- cover with a plastic wrap and let stand in room temperature until doubled (45 min)
- put the dough onto a floured work surface and shape into small balls

- flatten them with a rolling pin and let stand for 15 minutes, then fry them


-open the beignet with a knife and fill them as you wish:harissa diluted in some water and olive oil,potato, tuna ,eggs and olives
